Turkish Tomato, Lentil, and Mint Soup Recipe

Ingredients

  • Large Chopped Onion, 1 onion
  • Garlic, 1 clove (3 g)
  • Napolina - Chopped Canned Tomatoes, 1 container (400 g each)
  • Trader Joe's - Vegetable Stock, 2.5 cups
  • Delallo - Canned Lentils, 2 cups

Directions

Spritz a large pan with low-fat cooking spray. Heat, add the onion and garlic and cook until softened, about 3-5 minutes.

Add the chopped tomatoes, entire contents of the can of lentils, mint, stock and salt and pepper to taste.

Bring to boil, reduce the heat, cover and simmer for 15-20 minutes.

Puree in a blender to serve smooth.
